In November of 2019, former Franklin Barbecue Pitmaster Ben Lambert, along with his wife Sarah Lambert, embarked on the journey of opening JNL Barbecue. Initially operating from a small food trailer with a 1,000-gallon Mill Scale cooker on Shady Lane in the east side of Austin, they later relocated to Riverside in early 2020. In late 2022, the Lamberts moved to a shared brick-and-mortar location on East Cesar Chavez, eagerly anticipating the completion of their permanent brick-and-mortar establishment. As an 8th generation Texan and a member of Austin's Old 300, Ben's love for Texas barbecue runs deep, with roots grounded in tradition. Naming the business 'JNL' after his late father, James Nolan Lambert, signifies his commitment to preserving both old and new barbecue traditions for future generations.
